Easy Chocolate Cookies | Without Butter

These chocolate cookies are so delicious but yet healthy since there is only a little amount of fat used in it. they wont spread at all and will hold their shape after baking.

I really love baking cookies specially at this season, but i know that baking lots of cookies always leads to eating a lot of them too! therefore, i had to came up with a recipe that is both soft and tasty and doesn’t require a block of butter.

Also, most of the time i want to make the cookie all in one bowl without making a mess, so using a hand or stand mixer would be too much for me.

This recipe is so easy and it will come together in a snap, so you can always double it or make it fresh as much as you want.

No Spread

One thing that i really like about these cookies is their shape. sometimes i only have one baking sheet ( or too lazy to make to batches) so i want to put all of the cookies close to each other! but with buttery cookies, they spread a lot and you should maintain the space for them. but for less fat content cookies, they hold they shape and just rise a little so no there is enough space for all the cookies in one pan!

Brown Sugar Bonus

While using only white sugar is good enough, but it will lead to more spread due to the melting of sugar crystals. thus, adding half a cup light brown sugar will help maintaining the shape.

On the other hand, brown sugar gives the cookies a nice nutty and deep flavor, with a hint of molasses taste. the caramelizing of both sugars will give the cookies a nice rustic look, too.

Tips & Tricks:

  • Do not use self rising flour, Cake flour is the best.
  • You can use any kind of oil, just make sure it’s flavorless.
  • Coconut oil works well too.
  • Add 1 tbsp of coffee for more depth of flavor. 
  • Add sprinkles or chopped nuts, white or milk chocolates if you want double chocolate cookies!
  • Sprinkle some crushed candy on it for decoration if you like.

Chocolate cookies without butter

Prep Time 5 mins

Ingredients
  

  • 1 Cup Cake Flour
  • ¼ Cup Cocoa Powder
  • ½ tsp Baking powder
  • 1 tsp Vanilla
  • ½ Cup white Sugar
  • ½ Cup Light brown sugar
  • Cup Oil
  • 1 Large Egg
  • 1 Pinch salt

Instructions
 

  • Preheat your oven to 180 C.
  • Mix all the dry ingredients and whisk them until combined.
  • Add oil and the egg, then mix them with a spatula until well combined.
  • Shape the cookies into small balls, flatten them and put them into a baking tray.
  • Bake the cookies for 15 minutes. Enjoy!
